Ingredient Substitutions


	Almonds, shelled		-	1/4 Pound	=	1 Cup
	Almonds, chopped, blanched	-	1 Ounce		=	1/3 Cup
	Almonds, in shell		-	1 Pound		=	1/4 Pound nutmeats
	Apples, raw, unpared		-	1 Pound		=	3 cups, pared and sliced

	Baking Powder			-	1 teaspoon	=	1/4 tsp. Baking Soda + 1/2 Cup Buttermilk or Sour Milk
									(Reduce other liquid in recipe by 1/2 Cup)
	Beans, dried			-	1 Pound 	=	6 Cups cooked
	Bread, loaf			-	1 Pound		=	12 to 16 slices
	Bread, loaf			-	1 Slice		=	1/3 Cup dry crumbs
	Butter				-	1 Stick		=	1/2 Cup OR 1/4 Pound OR 8 Tablespoons
	Butter				-	1 Cup		=	1 Cup Margarine OR 3/4 Cup Chicken Fat

	Cabbage, Raw			-	1 Pound		=	4 Cups Shredded
	Corn on the cob			-	12 Ears		=	3 Cups Kernals
	Corn Meal, uncooked		-	1 Pound		=	3 Cups
	Corn Meal, uncooked		-	1 Cup		=	4 Cups cooked
	Cornstarch			-	1 Tbsp.		=	2 Tablespoons Flour
	Cornstarch			-	1 Tbsp.		=	1 Tablespoon Potato Flour
	Cornstarch			-	1 Tbsp.		=	4 Tablespoons quick cooking Tapioca
	Cream, heavy			-	1 Cup		=	2 Cups whipped
	Cream, heavy			-	1 Cup		=	1/3 Cup Butter + 3/4 Cup Whole Milk
